This Spicy Garlic Mashed Cauliflower recipe is a great side dish alternative to mashed potatoes. Cauliflower has been staple in many of my recipes lately because it is a great, low-carb replacement for rice. If you’re looking for a keto friendly side dish, then this spicy garlic mashed cauliflower recipe is right for you.
The spice doesn’t come across as strong if you lower the amount of peppers being used. There is also enough butter that it definitely tastes slightly sweeter and balances out the robustness of the garlic. The pine nuts add a touch of crunch in an otherwise mushy consistency. I could even swap out the standard mashed potatoes dish for this low-carb replacement meal! This recipe pairs well with Slow Cooker Italian Beef.
- 2 tbsp oil
- 1 bag riced cauliflower
- 2 tsp salt
- 1/2 cup banana peppers
- 1/4 cup pine nuts
- 8 tbsp butter
- 3 garlic cloves
- 5 tbsp bread crumbs
- 2 tbsp Parmesan cheese
- In a small bowl, mash the butter with a fork until softened. Add the garlic, bread crumbs, and Parmesan and mix until fully incorporated.
- Heat the oil in a large skillet over high heat.
- Add the cauliflower and cook until thawed.
- Stir in the bread crumb mix, letting it melt, then toss in ½ cup of the cheese, the pickled peppers and ¼ cup of the pine nuts.
- Serve Immediately.
